Description
Due to the efforts of growers and winemakers, the production of Rossese di Dolceacqua underwent a significant improvement in quality, and the wine received important wine industry awards. In 2007 the cooperative launched the Maixei line of wines. The term maixei is used in local dialect to refer to dry stone walls which support the strips of land used for the cultivation of vineyards, olive groves, flowers and vegetables. The Rossese vineyards that provide the grapes for Maixei wines are situated on the cultivated terraces which make the landscape so distinctive.
Maixei wines combine the essence of dry stone walling, a traditional technique used in Liguria, with a modern flavor, imbued with memories of the past. The grapes are harvested by hand, Fermentation takes place at controlled temperature (28 ° C) in stainless steel tanks and selected yeasts. During maceration (4-6 days) the must-wine is followed by analysis and chemical composition and mass in fermentation operations are performed that allow you to optimize the extraction of color and body. Aging and malolactic fermentation in steel. The wine is bottled only when it is deemed ready.
