The olives are hand picked in early October and
cold-pressed with 12 hours of picking in a continuous cycle oil mill. For the
2013 vintage, 300 bottles were produced, numbered, and collared with a chemical and sensory
analysis of an extraordinary harvest year.
This oil is a blend of two native olives, 70% Caiazzana with a small percentage of Leccine and
Frantoiane. It is a hearty and rich
olive oil from quality olive groves.
