Pinot Nero selected grapes, Noir
has a ruby red color with light orange highlights, which become more pronounced
over time.
After hand-harvesting, the must is fermented at controlled temperatures in
cubic stainless-steel tanks for 21 days. Afterwards, it is aged for 12 months
in French barriques, and it is
refined for other 12 months in the bottle before releasing. You may not expect a Burgundy-style Pinot Noir up
in the hills of Oltrepò Pavese, but you will
be surprised by this very complex, medium-body Pinot Noir. The bouquet
consists of fine, intense, and elegant
aromas with hints of red berries, cherries, rose hips, and leather. The flavor is full, rich, and determined with
a pleasant persistence and length on the palate. This elegant wine can be
enjoyed with starters and first courses, roasted meats, pink-fleshed fish like
salmon, ocean trout, and tuna, and
mushrooms dishes.
