Intense, seductive and typical aromas, with hints of liquorice and forest fruits. The pallete is rounded, smooth, intense and persistent, with assertive notes of red berry fruit and Marasca cherry.

Its intense, fruity perfume and its fresh, smooth taste make it excellent for serving with starters and fish dishes or, more simply, as an aperitif.

Nieddera is the name of an ancient species of vine, native to Sardinia. The Contini Nieddera is the result of a wise combination with other select Sardinian varieties. The mus, obtained by gentle pressing, ferments for approximately 10 days, in contact with the grape skins. Maturing takes place in part in chestnut casks of 25 hl capacity and in part in barriques made of oak from the central massif of France. The average maturing period is approximately 10 months. While it can be drunk immediately after the initial maturing period, Nieddera improves progressively with time. A perfect wine to accompany meat, poultry, and game dishes.

The name Karmis means "vine" and from ancient times this appellative was used to identify one of the most select wine producing areas of the Tirso river Valley, an area between Cabras and Baratili. The Contini Wine Company has chosen this name to indicate one of its most representative wines. Karmis is obtained from the vinification of Vernaccia and Vermentino grapes, selected with exceptional care by the producer and coming from adult, shrub-types vines, which produce between 30 and 40 quintals per hectare. This wine is specially suited to accompany dishes of fish, either grilled or with sauces, and white meats.

Sustantzia has an intense ruby red color and aromas dark red fruits. The pallette has a full body, but a soft and smooth mouthfeel. This full wine can be paired with red meat and strong cheeses.
Cantina del Bovale's winemaking technique for producing Sustanzia is as follows. After picking the grapes in crates, the stalks are removed and the grapes are loaded in the Ganimede wine-making tank for about 8 days at a temperature of 28 degrees, utilizing the energy produced by the fermentation for the process of lifting and soft mixing of the marcs on the must, so facilitating the extraction of aromas and coloring substances without the assistance of mechanical action of pumps. Afterwards the wine improves in the steel tank until it is bottled at in the steel tank until it is bottled at least 9 months after picking.
