The San Gervasio vineyard extends over an area of 2.5 hectares in the commune of Teglio at 750 meters.  After four years of experimentation, they decided to grow grapes that are suitable for partial drying (appassimento in Italian) in this high-altitude vineyard featuring peculiar characteristics.  The resulting wine is Sforzato Ronco del Picchio, whose name refers to a small wooded area behind the vineyard that was studied during the first research phase, always in the hamlet of Carteria.

For this wine, the grapes selected in the vineyard, are picked during the first week of October.  They are left in plastic boxes and arranged in an airy room until the first half of December.  The grapes then go through fermentation in stainless steel tanks for 20 days with maceration for 10 days.  It goes through malolactic fermentation and then aging for 12 months in barriques.
