Monsupell Metodo Classico Brut is made with 90% Pinot Noir and 10% Chardonnay grown on calcareous and clay-rich soils of the gentle slopes of the municipality of Torricella Verzate, in the Oltrepo Pavese DOC. The grapes are harvested manually, then fermented at controlled temperatures in stainless steel tanks long enough to obtain the base wine. Afterwards, the wine is vinified using MetodoClassico(MethodeChampenoise), and then left on the lees for a period of about 30-36 months before disgorgement. The color is a light straw yellow with hints of green. The bouquet is lively with aromas of dried fruits, vanilla, and wild flowers. On the palate, the wine is intricate and extremely well-balanced, with persistently soft bubbles, flavors of toasted almonds, wild raspberries, hints of mineral tones, racy acidity, and a lingering crispy finish.
This fabulous wine will pair well with seafood, white meat, assorted salumi, assorted cheeses, risotto, and pasta dishes.
