Antico Gregori is produced only in the best vintages of Vernaccia, those considered excellent. The base of the 1976 vintage was topped up for a few years with small percentages of younger Vernaccia, in order to revive the Flor yeasts, according to a method similar to Solera; following a very long oxidative refinement, it was then completed with the addition of small quantities of very old Vernacce, whose base dates back to the first decades of the last century. color is Shining topaz with amber reflections. with enveloping and warm taste, surprising freshness and flavor in a fantastic balance supported by very long persistence, excellent taste olfactory correspondence, with the nose of great breadth and complexity, deep notes of hazelnuts and honey, walnut husk and custard, closes with touches of salty peanut and figs. Excellent on bottarga preparations, to be tried on Sami hard cheese with spicy fig jam, great meditation wine even in simple conversation. Serve at 13-15 in a large glass.
