TASTE: intense ruby red color with slight purple hues. The nose is full of ripe red fruit with just a hint of herbs, with warm and enveloping notes and an impact that is nice and soft. The palate is mellow, gradually opens without thundering explosions. It is a wine free of sharp edges, that is smooth and balanced with fair pleasure. In the final round the fruit is made simple by a slight hint of bitterness. AGING: in cement tanks, then in the bottle for 3 months. PAIRINGS: This is a great expression of an everyday Lazio table wine. It is great to accompany cold meats and cheeses, Italian antipasti, roasted meats, first and second simple dishes such as pasta or gnocchi with tomato sauce, omelets, scallops, potato gateau, but also for more demanding and rich dishes, like the first course with mushrooms and truffles, rabbit cacciatore, and chicken in a spicy sauce.
