Description

The olive groves are located in the hilly areas of Colcimino and Madonna Delle Grazie in the municipality of Bevagna at about 400 m. of altitude. Totally exposed to the sun for the whole day, they produce olives of superior quality (Moraiolo 60%, Leccino 20%, Frantoio 20% ) which, are harvested by hand in October or November and immediately processed with stone millstones (cold extraction) by dripping and centrifugation.

The result is a very fine oil, the color is gold-green with very low acidity, a fruity taste, and excellent quality.

This extra virgin olive oil is excellent for raw dressings, it maintains its characteristics unaltered even after cooking, giving dishes often great flavors.
