The prince of the Friulian white grape varieties is Friulano, and since it can no longer be called Tocai they have chosen the name Friulano as a testimony of the link with these lands. In Friuli Venezia Giulia when someone asks for a glass of Tajue, will be offered a glass of Friulano. This special wine is made with 100% Friulano from a 75 years old vine. Harvest with a selection of grapes, fermentation of grapes at a controlled temperature of 18° per 20 days, and maturation of the must in stainless steel vats for 8 months, further aging in bottle for 4 months. The color is intense straw yellow with an aroma of wildflowers and a hint of green apple, with overtones of citrus. The taste is rich in layers of fabulous taste, silky, savory, complex with a bitter almond aftertaste. It expresses its best in the 2 years after bottling, maintaining its features for at least 10 years. Paring suggestions; Ethnic fish cuisine, grilled fish with bone, first courses with fish sauces, and shellfish.
