Spiriti Ebbri uses their own grapes as well as grapes from other farmers in the Cosenza region in Calabria. The wines made mostly organic and always from old vines. Vinification is held as close to nature as possible, with no added yeast or substitutes, and no filtration.
Deep ruby red. On the nose hints of red fruit, violet, forest fruit. In the mouth, it is soft, round, warm, nicely persistent finish.
Typical south-Italian wine, but with good acidity and without too much wood.
Made with Merlot 20%, Greco Nero 20%, and Guarnaccia Nera 30% Magliocco 30%. These are grapes that grow in vineyards that are rooted in a mainly sandy subsoil. Cotidie wine ages 8 months in barriques and 2 months in steel, and 4 months in the bottles.
PAIRING: Red meat, game, and cheese. Alcohol 14%.
