A blend of hand-selected grapes of Corvina 40%, Corvinone 25%, Rondinella 30%, and the remainder of Oseleta, Molinara, and Croatina, this wine has an intense ruby red color with purple reflections. The wine is kept in contact with the grape skins of Amarone: this is where the term “pass” comes from. This process lasts between ten to twenty days, during which it allows the transfer of sugar, color, polyphenolic substances, and softness. Daily “remontage” is carried out and the fermentation temperatures never exceed 20°C. Afterwards, the wine is refined in French oak barrels for at least 2 years, and released after 6 months in the bottle.The nose is very floral with red berries such as raspberry and blackberry. The palate is elegant, smooth and very fruity, well-balanced with a spicy touch. This intense and rich wine has soft tannins, plenty of freshness, and a long after taste.Wine of medium structure, it will be ideal the whole meal because of its freshness, particularly with risotto, medium aged cheeses, or savory dishes.
