Cantina del Bovale wine making technique for producing Sustanzia is as follows: After picking the Monica grapes in crates, the stalks are removed and the grapes are loaded in the Ganimede wine-making tank for about 8 days at a temperature of 28 degrees, utilizing the energy produced by fermentation for the process of lifting and soft mixing of the pomace on the must, so facilitating the extraction of aromas and coloring substances without the assistance of mechanical action of pumps. Afterwards the wine ages in the steel tank until it is bottled at least 9 months after picking.

Sustantzia has an intense ruby red color and aromas of dark red and juicy, ripened fruits. The palate has a full body, but a soft and smooth mouthfeel. This full bodied wine can be paired with red and roasted meats, and strong and mature cheeses.

I have  not opened any of the wines I ordered, but my shopping experience was great. I feel bad because one of my neighbors interceded during the delivery process and made everything complicated. Thanks!
