The Italian word for “woody”, Selvoso refers to the forests surrounding the boutique winery on the hills of the Maremma Toscana. A blend of 45% Cigliegiolo, 40% Sangiovese, and 15% Merlot, the grapes of this wine are organic conversion and grown with the guyot system. Contact with skins varies 15 days on skins for Cigliegiolo and Merlot, 25 days for Sangiovese. This fabulous blend goes through the aging of 12 months in French oak. Once bottled, without filtrations or clarifications, it ages for another 12 months in the bottle before it gets released. The color is a bright ruby red with violet reflections. The nose is brilliant with powerful notes of flowers, small berries and aromatic herbs, closing on a mineral note and a hint of sandalwood. The silky, rich and fresh palate evolves into a vibrant finish. It has notes of dry black cherry and tree bark, velvety tannins, animating acidity, and a lively lingering finish. Pair it with hearty meat dishes such as Bistecca Fiorentina, games, beef, and lamb.
