This Valpolicella Ripasso is sourced from five classic communes of the Valpolicella Classico zone: Sant’Ambrogio, San Pietro in Cariano, Marano, Fumane and Negrar, in the hills northwest of Verona. The grapes used are the same in the Valpolicella (Corvina 70%, Rondinella 20%, Corvinone 10%,) however this wine has undergone the "Ripasso," meaning re-run or go over again," process where the wine undergoes a second fermentation with the remaining dried skins of the Amarone wine. This process gives the wine more structure, body and complexity; this Valpolicella Ripasso has a fantastic nose with cherry, plum, cinnamon and hints of white pepper. The palate is rich with red fruit and notes of spice and clove. A great pairing with heavy pastas, steak and moderate-matured cheeses.
