Made of 100% Vitovska, the grapes of this outstanding wine grown on the edge of Castello (Castle) dellaRubbiia, on carsicsoils, rich with clay and calcareous stones. After hand-harvest, the grapes are separated from the bunches and fermented at controlled temperature, only with natural yeasts and with skin contact, for about 7 days. The wine remains on the lees in stainless steel tanks for 12-18 months, and spends a further 12 months in the bottle fining before release. The color is a pale yellow and the nose is layered with aromas of honey, dried fruits, and almonds. The palate shows notes of spices, fresh fruits, honey, quince lively acidity and flinty minerality, with a long dry finish. Pair it with seafood, pasta with Bottarga, mild cheeses, white meat, and salads.
