The Castello di Rubbia Malvasia is made of 100% Malvasia istriana grapes grown on the edge of the Castle's property in vineyards planted on Carsic soils rich with clay and calcareous rock stones, soil rich in marine sediments. After being hand-harvested the grapes are separated from the bunches and fermented only with natural yeasts at controlled temperature and with skin contact for about 3 days, the wine will remain on the lees in stainless steel tanks for a further 12 to 18 months and bottling after 3 years without filtration. Based on the natural evolution of the wine, partial maturation can take place in used Slavonian oak barrels, bottling without filtration after 2 years. Refinement in the bottle for at least one year.
Tasting notes: Straw yellow tending to golden, with scents of Mediterranean scrub. Since this wine is made without filtration, needs to be open and pour to the glass at least 20 minutes before drinking it, and It is very ready to drink now after 6 years! Then the nose is lush with aromas of apricot, Anjou pears, and hints of camomile. This is a wonderful particular wine dry and full-bodied sip, intensely fruity, with incisive long pleasant mineral hints finish.The palate shows notes of wildflowers, pear, honey, lively acidity, and flinty minerality. This wine will pair well with Fish, Seafood, Mild Cheeses, White Meat.
