The Castello di Rubbia Malvasia is made of 100% Malvasia Bianca grapes grown on the edge of the Castle's property in vineyards planted on carsic soils rich with clay and calcareous rock stones, soil rich in marine sediments. After being hand-harvested the grapes are separated from the bunches and fermented only with natural yeasts at controlled temperature and with skin contact for about 3 days, the wine will remain on the lees in stainless steel tanks for a further 12 months and spends a further 12 months of bottle fining before release.
In the glass is a pale yellow color. The nose is lush with aromas of apricot, Anjou pears, and hints of camomile. The palate shows notes of wildflowers, pear, honey, lively acidity, and flinty minerality with a long pleasant finish. This wine will pair well with Fish, Seafood, Mild Cheeses, White Meat.
