The
products entitled "I Mille Per" signed by the famous winemaker Ricardo Cotarella, is
the result of an interesting project carried out by several producers in
Campania. It was decided to impose a very strict experimental
production protocol, which aims to investigate the possibilities of long
aging for some of the most representative regional native vines. In
this case, the Aglianico is the fruit of this journey. The must ferments
in stainless steel, macerating on the skins for 22 days with daily
pumping, while the malolactic fermentation takes place in barrique. The
subsequent refinement phase lasts 14 months and takes place in Allier
and Tronçais barriques. An intense and persistent Sannio DOC, which
demonstrates the foresight of the project undertaken by La Guardiense.This outstanding wine is made with 100% Aglianico Made in Sannio Beneventano in Campania.
This
unique project of its kind, called "The Thousand for Aglianico", with
clear reference to the approximately one thousand members of "La
Guardiense" which with passion and commitment have always ventured with
challenging choices aimed at improving production processes both in the
vineyard and in the cellar.
The
wine has a deep almost impenetrable red color. The spicy perfume is
reminiscent of small red fruit. powerful and intense, with a silky
though strong tannic structure that enhances a very persistent finish.
Perfect with second courses of red meat and game, It gives the best of itself with a wild boar stew.
