Pasetti's Pecorino is harvested during the first week of September when the grapes are able to reach a good sugar level without losing great acidity.  The wine stays in stainless steel on lees for only 2 months and then bottle aged for 3 months before its release.

The wine has a strong structure and a bouquet of elderberry and ripe fruits. It is soft and warm with a long persistence.  Pair this wine with risotto, light cheeses and white meats.
