The Castello di Rubbia Malvasia is made of 100% Vitovska grown on the edge of the Castle's property in vineyards planted on carsic soils rich with clay and calcareous rock stones, after being hand harvested the grapes are separated from the bunches and fermented only with natural yeasts at controlled temperature and with skin contact for about 7 days, the wine will remain on the lees in stainless steel thanks for a further 12-18 months and spends a further 12 months of bottle fining before release.
In the glass it is a pale yellow color. The nose is layered with aromas of honey, dried fruits, almonds and spice. The palate shows notes of spices, fresh fruits, honey, quince lively acidity and flinty minerality with a long dry finish. This wine will pair well with Fish, Seafood, Pasta with Bottarga, Mild Cheeses, White Meat and Salads.
